- 1 cup mixed vegetables (carrot, peas, beans)
- 1 small onion, 1 tomato
- ½ tsp turmeric, ½ tsp cumin, 1 tsp coriander powder
- 1 tsp oil, salt, chilli
- Coriander leaves, lemon
Coach's tip
Add a boiled egg or 100g paneer on top if this is dinner rather than a side.
How to make it
- 01
Heat the oil, add cumin, then onion and cook 2 minutes.
- 02
Add tomato and spices and cook until soft.
- 03
Add the vegetables and 1½ cups water; bring to a boil.
- 04
Stir in the oats and simmer 3–4 minutes until creamy.
- 05
Finish with coriander and a squeeze of lemon.
Why it works
Warm, cheap and high in fibre. Good for the mornings when sweet porridge doesn't appeal.
